Your Daily Delicious: Peanut Butter Pancake Muffins

Slaving over a hot griddle making pancakes doesn’€™t sound like a fun morning to me, so skip the pancakes and make these easy pancake muffins instead!

These Peanut Butter Pancake Muffins have that amazing pancake taste and flavor, all in the convenience of a muffin.

Peanut Butter Pancake Muffins

Have you ever heard of a puffin? These pancake-muffins or puffins€ (not to be confused with the bird) have some maple syrup mixed into the batter for that pancake flavor you’re after — and they have the same texture as a fluffy pancake, too.

Ingredients for Pancake Muffins

Just pour your pancake batter into some lined cupcake tins and sprinkle with whatever toppings you prefer: coconut, blueberries, nuts – you name it. But since we added some peanut butter to these puffins, the obvious topping of choice was a handful of chocolate chips to complement the peanut butter.

Sprinkle Muffins with Chocolate Chips

Put them in the oven and do whatever your heart desires. Read the paper, watch a show, play with your children or  dog. But what you won’t be doing is sweating over the stove flipping your life away.

Serve them alone or with some syrup. You can even make mini puffins and eat four instead of just one and not feel bad about it at all.

Remember that one time when Milano cookies were like, the best things ever? Yeah, me too.

Remember that one time we made Homemade Milano Cookies and they were EVEN BETTER? Aw yeah, me too!

Forget what you think about the store-bought cookie, because one bite of these homemade chocolate-filled sandwich cookies and you’re going to wish you’d known about this recipe a lot sooner. But no worries! Today is The Day. The Day to Change All Days. The day when you make your own Milano cookies right in your kitchen. And then devour them all in a single sitting.

So, batter up:

Dough for Homemade Milano Cookies

First, combine the cookie ingredients, including butter, powdered sugar, egg whites, vanilla and flour. Sweet and simple. Also, DELICIOUS.

Out on silicone mat

Pipe little sections of the batter onto a silicone mat or parchment paper-lined baking sheets. I made cookies with both linings, and found the silicone mats do a MUCH better job of rendering the perfect Milano cookie shape. But, they both get the job done and that’s what really matters.

Bake the cookies until the edges are lightly browned.

Then, make the chocolate filling: Hello, heavy cream, semisweet chocolate and orange zest. Welcome to my life.

If you want sip vino on your vacay, then there are options for you on both the East and West Coast. If you’re closer to Cali, then the place to be is Napa, which has a climate that’s perfect for producing many of the country’s best wines. If you’re looking to chill on the East Coast, Long Island is where it’s at. The region has a wide selection of vineyards that are all easily accessible and close to one another. And, the best part is that they are all close to the beach – so you can pair a visit to this wine-soaked region with a trip to the Hamptons.

If those regions aren’t conveniently located, there are actually wineries in every one of the 50 states (yes, even Alaska). These provide great opportunities for staycations – most of the wineries offer tours, tastings and discounts on their products (sweet!). If you’re looking to spend some time soaking up suds in the summer sun, then Portland, Maine is the town for you.
