Remember when your doctor told you to make sure your plate has all of the colors in the rainbow?

Eating the rainbow is easy with this fresh and light slaw. Here at Tablespoon, we love anything rainbow! And how could anyone resist a slaw this beautiful?

This Rainbow Slaw is perfect for a summer get together because it is made with a honey lime dressing, tons of fresh and colorful vegetables, and not even a smidge of mayo. It will last longer outdoors, and it just gets better and better as it sits. It is light, crisp, and beyond tasty.

Dressing for Rainbow Slaw

I start by making my dressing. Combine honey, lime juice, vinegar, cumin, salt, and pepper in a small bowl. Whisk to dissolve the honey.

Drizzling in olive oil

Slowly drizzle in the olive oil, while whisking. Take a taste to make sure that your seasonings are right. You might need a little more salt and pepper. Or honey even. It truly depends on your taste. Set the dressing aside.

Ingredients for Rainbow Slaw

Chop, then combine the vegetables in a large bowl (I wait until I have tossed the salad before adding in the cilantro).

Pour the dressing over the slaw and give a good toss.

Add the cilantro and toss until everything is combined. Give a taste and make sure that you’re properly seasoned.

This slaw is great served right away, but I think that it tastes better after an hour or two (or a day) in the fridge. Enjoy!

Firecracker Cake with Pop Rocks

Who knew a 4th of July dessert could be its own fireworks display filled with color, lights, and explosion?

This super fun and eye-catching Firecracker Cake is vibrant and patriotic … just what you need for this 4th of July!

With some creative coloring of a cake mix, the inside of this cake is a shocking surprise of red, white, and blue.

Start by dividing your cake batter into three parts and coloring some of it red and some of it blue, leaving the remainder white.

Pour the red cake batter in the bottom of a Bundt pan first. Next, carefully layer your white cake batter, and end with a ring of blue batter on top. It doesn’t have to be perfect, but the more you separate the batter the more distinct the colored designs will be. And who knows what pattern it will actually make until you cut into the cake. There’s no way to screw this up!

The top of the cake is drizzled generously with red, white, and blue frosting and topped with colorful sprinkles.

To surprise your guests with an explosion in their mouths like I did, sprinkle some strawberry flavored Pop Rocks on top. Everyone turns into a kid when Pop Rocks are bursting in their mouths!

 

And just when you thought this cake couldn’t possibly get any cooler, I took it to ONE more level of explosion … sparklers!!! You don’t have to wait until dark to watch these fireworks. Start your fireworks show right after dinner with this Firecracker Cake!
